Call me stupid, I always hear "never pierce your meat" and "always use tongs" when cooking steak, but tongs are still kind of sharp... if you really wanted to not pierce the meat, why not use a spatula? I thought it would be the most intuitive cooking utensil, I'm surprised it's never mentioned in any article/video... is there a really obvious reason to not use one that I'm not seeing?

When you placed that in the oven did you cover it?? Also this is a beef tenderloin roast, right?? I have to cook for about 25ish people and am afraid this will be ghastly expensive. Wanting to make beef stroganoff with it, but realize this is a steak that should be used in its own right with sides. Could you recommend other beef that would be tender for stroganoff. I have made steak alot, but not stroganoff. This that you made, oh my word, I WANT!

OMG.... As a chef. You just destroyed a really great dish. Béarnaise atop a non seefood or egg dish. Just... NO. Never make it as a comis chef in my place. :( |
